… wer befleckt hier wen? …
„macchiato“ bedeutet „befleckt“ auf Italienisch und findet sich im Namen zweier unterschiedlicher italienischer Kaffeespezialitäten: der Latte macchiato – oder vielleicht sogar die latte macchiato ? – ist geschäumte Milch, die hinterher vorsichtig mit einem Shot Espresso „befleckt“ wird, um sich dann zu unterschiedlich gefärbten Schichten zu mischen. Um dieses pittoreske Schauspiel auch gebührend würdigen zu können, wird der Latte macchiato im Glas serviert.
Ein Espresso macchiato hingegen ist nichts anderes als ein kleiner schwarzer Kaffe, auf dem einige Flecken Milchschaum schwimmen. -ecco!
Wie kam die Stadt Athen zu ihrem Namen? – In mythischer Vorzeit stritten sich die Götter Athena und Poseidon um die Patronanz der damals noch namenlosen Stadt. Beide wollten den Einwohnern ein Geschenk machen, nach dessen Wert diese ihren Schutzherrn wählen sollten. Der vielfach überlieferte Wettkampf, unter anderem bei Herodot, Apollodor, Pausanias und Plutarch, ist das Thema zahlloser antiker Darstellungen und verlief folgendermaßen: Der Meeresgott schenkte der Stadt eine Quelle indem er mit seinem Dreizack eine Spalte öffnete, aus der allerdings nur Salzwasser sprudelte. Die weise Athene wählte den Olivenbaum als ihre Gabe. Dieser spendete Nahrung, vielseitig einsetzbares Öl und Holz. So kürten die ebenso weisen Städter Athena zur Siegerin und der Stadt ihren neuen Namen.
Attische Münzen zeigten stets stolz das Profil der Göttin sowie ihr Attributtier, die Eule, zusammen mit dem lebensspendenden Ölzweig – und das tut die griechische 1 Euro-Münze bis heute!
Auch im My Secret Garden schätzen wir das Geschenk der Göttin und lassen uns das mythische Gut direkt aus Griechenland liefern. Die Familie Taslis bewirtschaftet seit vielen Generationen einen Olivenhain auf der Insel Lesbos – seit 2015 vermarktet Sohn Chrysostenis das „grüne Gold“ (chrysos bedeutet übrigens Gold auf (alt)griechisch :-)) unter dem Label Eolida.
Qualität bedeutet für Chrys „Biologische Produktion, Kaltpressung unter 25 Grad und ein niedriger Säuregehalt bei allen unseren Ölen. Wie gesund Olivenöl ist, wurde in vielen Studien nachgewiesen. Doch nur ein wirklich hochqualitatives Öl kann seine gesundheitsfördernde Wirkung tatsächlich zeigen. Eolida ist außerdem frei von Pestiziden und anderen Giftstoffen, da wir streng nach den Prinzipen der biologischen Landwirtschaft produzieren.“
Wir verwenden das naturbelassene Öl, das Chrys regelmäßig persönlich im Handwagerl über die vielen Stufen im Raimundhof bis zum Restaurant holpert, mit Vorliebe in unseren Gerichten. Außerdem findet ihr eine Karaffe des fruchtig-würzigen Öls zum Anrichten von Salaten und Speisen in den Tisch-Menagen – Καλή όρεξη!

Holunder galt schon im Altertum als Heilpflanze, insbesondere bei Fieber und Atemwegsinfekten. Hildegard von Bingen bezeichnete den Holunder gar als „Gottesapotheke“.
Die Pflanze enthält viel Vitamin C und andere Antioxidantien. Auch Fruchtsäuren und die Vitamine A, B1 und B2 gehören dazu. Die Anthocyanidinverbindungen, die den Holunderbeeren ihre tiefviolette Farbe verleihen (Holunderbeeren wurden früher zum Färben von Leder, Rotwein oder Haaren verwendet und kommen heute als Farbstoff in der Lebensmittelindustrie zum Einsatz) wurden in verschiedenen Laboruntersuchungen als Virushemmer identifiziert. So konnte eine Studie in Sydney belegen, dass die Inhaltsstoffe des schwarzen Holunder (sambucus nigra) sowohl als Infektionshemmer im Frühstadium einer Infektion mit Influenza-Viren, als auch als „Koordinator“ des Immunsystems während der Bekämpfung der Krankheitserreger fungieren. Auch eine Studie am Institut für Medizinische Mikrobiologie der Justus-Liebig-Universität in Gießen kam zu dem Schluss, dass „Der flüssige Extrakt eine hemmende Wirkung auf die Vermehrung der humanpathogenen Influenza-Viren zeigt“. 1995 veröffentlichte ein Forscherteam der Hebrew University of Jerusalem eine Doppelblind-Studie über einen Holunderbeerenextrakt. 90% der Patienten mit einer „Influenza B/Panama“-Infektion, die einen Holunderbeerenextrakt einnahm, war bereits nach 2 – 3 Tagen wieder völlig gesund. Die Patienten, die ein Placebo bekamen, benötigten mindestens 6 Tage dazu.
So, und jetzt meldet sich noch einmal die Altertumswissenschaftlerin in residence zu Wort:
Der Schwarze Holunder, dessen Blüten allerdings wunderschön weiß sind (und im Secret Garden als leckerer Sirup kredenzt werden) ist in Mitteleuropa eine der weit verbreitetsten Straucharten. Das spiegelt sich auch in seinen unzähligen volkstümlichen Namensvarianten im deutschen Sprachraum: Holler, Holderbusch, Dolder, Holder, Hunnel, Flieder, Elder, Alder, Attich, Kelkebusch, Keltenstrauch und etliche mehr. Der Wortstamm ist immer das althochdeutsche holuntar (holun = hohl, heilig, günstig, gnädig; tar = Baum oder Strauch).
Bei den Germanen galt der Holunder als heiliger Baum und Wohnstätte der Göttin Holda, welche Tier und Mensch vor Unheil bewahrte und von Krankheiten heilte, und durfte deshalb nicht gefällt werden. Noch aus dem 17. und 18. Jahrhundert ist überliefert, dass die Menschen den Holunder um Verzeihung baten, wenn sie ihn fällen mussten. Auch war dies nur Witwen und Kindern erlaubt.
Holda/Holla lebt bis heute in der Gestalt der Frau Holle in unseren Märchen und Sagen fort – und natürlich im göttlichen Holderbusch!
